Lai Yee's Kitchen- Bubur Cha-cha aka bobochacha 摩摩喳喳
Today marks 13 years since my Poh Poh passed away. In honor of her, I am cooking this to remember her amazing tong shui soup. She cooked us loads of soup, tong shui (sweet dessert soup) and all kinds of Chinese food. One of the reasons why I enjoy cooking a lot as she was one of my inspirations and guru in cooking.
This is the first time I tried cooking this famous Nyonya's dessert BoBoChaCha 摩摩喳喳 aka Bubur Cha-cha.
The dish is pronounced “bo bo cha cha” or “mo mo cha cha“. In Malay, “bubur” means “porridge”, and “cha cha” means “well”. ... Each region has a variation of Bubur Cha Cha: some include banana, black eyed peas, colourful tapioca jellies, or yam. It is popular in Malaysia, Indonesia, Singapore, Thailand and Philippines too.
INGREDIENTS
• Sweet Potato 1kg
• Yam 1/2 kg
• Bananas 2 pcs (big size) or 4 small size
• Sago 1 cup or more
• Coconut Milk 3 to 4 cups (depending on the pot size)
• Pandan Leaves 8pcs (4 for color, 4 for soup)
• Water 3 litres
• Evaporated Milk 1 can
Potato Dough:
• Tapioca Flour 60g each bowl/colour
• Hot boiling Water 30g each bowl
• Food colouring or natural colour(which u can make)
「SEASONING」
• A pinch of Salt (it is up to u to add)
• 4 to 6 pcs Gula Melaka or Palm Sugar
I really love bobochacha.. it is like an all-time favourite dessert for many of us.
This is my first time but definitely not the last time. I want to keep on trying to make the best version. I like this one, but i believe i can make fun chewy tapioca to add in. Let's see what I can create soon.

At Chye Lye Ah Ma Mee Sua, the dishes served are what owner Mr Ong Chye Lye had when he was young. Hence, he decided to give his dishes nostalgic names like “Ah Ma Mee Sua” and “Ah Gong Tau Chiam”. Amongst the 3 dishes we ate, Ah Ma Mee Sua is the most popular.
The mee sua from Mabo was soft and soaked up the flavours of the soup. There’s tender pork liver, meatballs and stewed mushroom in the soup. Every pork ball was firmly held together and complemented really well by the house-made tangy chilli sauce. Topped with freshly fried ginger shreds and Hua Diao Jiu before serving, the soup becomes a flavour bomb yet doesn’t overwhelm the palate.

For this video, we headed back to Neo’s Kitchen to complete a 6KG Ichiran Ramen Challenge! Ichiran Ramen is a popular Fukuoka Ramen chain almost exclusively based in Japan, with limited outlets in Taiwan, USA and Hong Kong. They specialise in Tonkotsu-style Ramen, which is pork-based. As they do not have a physical location in Singapore, we opted for their own Instant Ramen brand that is supposedly very close to the in-store Ichiran Ramen in flavour. For our convenience and to take advantage of their exclusive discount on Ichiran Ramen, we ordered most of our ingredients from Qoo10 and had them delivered to our doorstep. Here is what we got from Qoo10:

The Ichiran Ramen box came elegantly designed and packed while the char siew and eggs had straightforward instructions for preparation. After some time in the kitchen and a speedy assembly process, we ended up with a massive 6KG bowl of Ichiran Ramen. 10 portions of noodles were piled into our Giant Bowl, which was then filled to the brim with the Tonkotsu broth. 6 sliced eggs and 2 blocks of char siew were gingerly placed on top to round off the dish. The bowl was delicately garnished with spring onions, seaweed and rehydrated fungus. Unfortunately, we had difficulty cutting the char siew, so we opted to leave 1 intact.
Flavour-wise, it is probably one of the best Instant noodles I have ever had. It was rich with the deep and intense pork flavour you come to expect from Tonkotsu Ramen from restaurants. The noodles had a clean flavour without any taste of preservatives and retained their springy texture even after sitting in the broth for some time. It also came with a topping of chilli powder, which adds a strong spicy kick for those who enjoy it. The eggs were well-marinated and gooey in the middle. The char siew was moist and tender with the signature savoury pork flavour of good char siew.
All in all, it was an enjoyable challenge because it was homemade, delicious and convenient thanks to Qoo10. We tend to find ourselves needing instant noodles eventually, usually in the dead of the night or as comfort food, and you would be hard-pressed to find any better than this Instant Ichiran Ramen. I'm a Japanese guy living in Singapore, and in today's video, I tried to speak Singlish for 24 hours. Singlish is Singaporeanized English and the two features are:
1. the use of other languages like Chinese and Malay
2. the speed (so fast that most Japanese will not understand!)
The most popular Singlish term is "can", which can be used in almost every situation.
